Peanut-Crunch Oat Cookies

These cookies were inspired by a combination of junk food, overpriced movie theater concessions, and oats(just to make me feel less guilty about the fact that I used literal chocolate bars to make these). I feel that with oatmeal raisin cookies, the part that upsets me is biting into one, and being met with a mouthful of dried fruit instead of chocolate. Now, you can blame me on that, since I am basically halfway to legally blind at this point(thank you, video game addiction), but I think most of us can agree that chocolate chips taste better than raisins. I say most, in case you are allergic to chocolate, in which case, my condolences. So this recipe already rectifies my poor eyesight by using chocolate instead of raisins. But not just any chocolate. But Crunch bars(you can use Bunch of Crunch if you can buy some, but Crunch bars were more easily accessible). What I love about a Crunch bar is that it is mostly chocolate, but with texture. The puffed rice bits are delightful! So using those in place of chocolate chips adds a fun, additional texture to the cookies. I also went with peanut butter chips in place of regular chocolate chips, since regular chocolate chips are boring(just kidding, I love chocolate in all of its forms), just to add another contrasting flavor into the cookie, and since I love eating peanut butter with oatmeal like some gym rat on a fitness kick. What? It’s high protein and it makes me feel less disgusting if/when I shotgun an entire layer cake. Anyways, these cookies came together really quickly. I used my usual chocolate chip cookie ratios for a gooey-er cookie, but subbing out some of the flour with rolled oats to give it that oat cookie feel!

Makes 24 cookies:
1 stick unsalted butter
2/3 cups dark brown sugar
1/3 cup granulated sugar
1 tsp vanilla extract
a pinch of cinnamon
1 egg
1/2 cup peanut butter chips
1/2 cup Crunch bars, coarsely chopped, or Bunch of Crunch
1 1/4 cups all-purpose flour
1 cup rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
a pinch of salt
